They are bound completely by contracts and promises, though they will twist and bend to turn the contracts to their own advantage. Sebastian claims that he never lies, though he has no difficulty with twisting the truth, omitting important information, or using distraction to get around telling the entire truth.
Being so old and powerful, Sebastian has stopped eating regular souls. He prefers the challenge of nurturing and raising up high-quality souls. This causes him to go hungry, but he considers it worth it, as the anticipation of a good meal only enhances the taste in the end.
Sebastian loves cats and hates dogs. While he adores cats for their sleek bodies, soft fur and pleasant purrs, he can't stand dogs, calling them loud and barbaric. He's particularly contemptuous of dogs for the way they curry the favour of humans, willingly allowing themselves to be collared and trained and becoming loyal to someone who uses the "carrot and stick" method. In addition, he seems to have great contempt for humans as a race, though he's also amused by their cruelty and capacity for violence. He values a cat's independence, and claims that he would never sink to the level of a dog - a statement that seems quite ironic, considering he willingly serves and is bound to a human.
In fact, while he did willingly become Ciel's butler, and even seems to come to enjoy this position to a certain degree, it's obvious that he also chafes at his servitude. In a flashback, it's clear that he's never been a butler before, and that he found the position difficult and demeaning at the beginning. He constantly teases, mocks and belittles Ciel, digging at him with sarcasm masked with servile politeness. During a scene in which he's giving Ciel violin lessons, he lords it over Ciel a little, taking pleasure in the fact that Ciel has to do what he tells him, while he acts in the role of teacher. He never disobeys an order, of course, but he will interpret orders creatively if possible to suit his own ends. To him, it's only really bearable as a temporary slavery, to be endured in order to achieve a truly valuable prize.
Nonetheless, his pride is considerable. By the time the show starts, he is the perfect butler, completing all tasks with perfection and style, and so focused on his duties that when Ciel is kidnapped his main concern is that the tea he made would be wasted, and that he'd better have him home quickly or he wouldn't have time to begin dinner preparations. Whether or not he loathes serving a human, he does so very well.
As the series goes on, in fact, his devotion to Ciel seems to increase and his resentment of his situation decreases. He becomes more and more affectionate and protective of Ciel. Early in the series, he looks at Ciel all tied up and beaten to a pulp and tells him that he likes him looking like this, because he looks like a small, pathetic worm. He seems to have little concern for Ciel's safety and health, other than that required by Ciel's orders, and the fact that he won't allow Ciel to actually die. Although, he seems to have some concern for Ciel's mental state, as when they first come upon one of Jack the Ripper's victims, he covers Ciel's eyes to try to keep him from being affected by the grisly scene.
The exception is when it might seem that Ciel wavers in his determination. What Sebastian emphatically does not want is to be stuck in this role forever and not receive his reward. He takes on a persona of patience, devotion and loyalty, but he also spends his time corrupting Ciel and ensuring that the flames of his desire for revenge never die down. He wants that soul, above all else.
In the second season, Claude accuses him of having an unnatural attachment to Ciel. He belittles him far less, and he is very protective of him, not just to the minimum extent required. Nevertheless, Sebastian is a demon and incapable of true caring, though he can be very kind towards Ciel. Ultimately, all he wants is to eat Ciel's soul, though as his affection for Ciel increases he no longer seems to wish to hurt him or make him suffer gratuitously.

Other: Sebastian is hax. He can and will accomplish incredible feats in order to obey a direct order from Ciel, from ripping off the roof of a train car, to redirecting the course of an entire river.
He has some magical-type abilities, including the ability to transform into a raven. He can also clean an entire room and lay out fresh flowers in less than ten seconds. He's incredibly strong and fast, and prefers to use dinnerware like knives, forks and dishes as weapons, though he's also very good at basic, dirty hand-to-hand combat. He is nearly impossible to kill, and can only be killed by the use of a demon-killing weapon. Injuries from regular weapons will heal quickly and only slow him down - if that.
Sebastian's full demon form is never revealed in either the anime or the manga. He is either embarrassed by his demon form, or doesn't want Ciel to see it because he feels it would be traumatizing to him, as he forces Ciel to keep his eyes closed any time he might see his true form. Sebastian appears to be closely linked to ravens, and black feathers swirl around him when he's in his demon form. His eyes glow red and are slitted like a cat. I suspect he has long black wings, and he has claws on his hands. Also he wears fabulous high-heeled boots in his demon form. Additional Links:

He wore an apron to protect his tailcoat and vest, and used an oven mit to protect his hand, but he needed neither of these things. Still, appearances must be kept up. None of those who lived in his young master's household knew he was a demon, other than Ciel himself, and that was the way it should remain.
In the distance he heard a small explosion. He paused, head cocked, and listened, but the sound wasn't repeated. To investigate the almost certain disaster that was brewing in the back garden, or to finish what he was doing? He wavered for a moment, uncertain. The gardener, Finny, was a complete and utter moron, and there were definitely times when Sebastian wanted to take the boy's head between his fingers and give a sharp turn to the left. The sound Finny's neck would make as it broke would be a sweet sound indeed.
But unfortunately, such things were Not Done. A butler didn't go around killing the other servants for being incompetent. Unfortunately.
Reluctantly, Sebastian turned back to his meal preparations. The fact was, he had little choice. The soufflee needed to be finished or it would be ruined, and he didn't have time to deal with Finny at the moment. He would just have to hope that whatever Finny was doing, it wouldn't actually destroy the garden completely. Again.
A bell rang and he sighed softly, removing the apron and hanging it up. Finny could be ignored, but his young master could not. If the soufflee failed he would simply have to make something else for tonight's dinner. His young master needed him, and if Ciel needed him, he would go without delay. If a Phantomhive butler couldn't handle this much, he didn't deserve the title.
